“Cooking for the Cure – Fantasy of Flight for the Fight”

June 30, 2009 – A team sponsored by Fantasy of Flight, Central Florida's premier aviation attraction, is hoping to end breast cancer one step at a time with the sale of their new "Cooking for the Cure – Fantasy of Flight for the Fight" cookbook (2009 Morris Press Cookbooks), a collection of 150 tantalizing recipes including main dishes, sides, desserts, as well as a glossary of cooking terms, charts and conversions.

The cookbook is for sale online at www.fantasyofflight.com/store/ or in person at the Fantasy of Flight gift shop for just $10. The entire purchase price will go to the fight against breast cancer, with 85 per cent of the funds raised going to the Susan G. Komen and 15 per cent to the National Philanthropic Trust Breast Cancer Fund.  The Fantasy of Flight gift shop is open to guests at no charge seven days a week during regular attraction hours, 10 a.m. to 5 p.m.

The Fantasy of Flight team, comprised of five walkers from the Lakeland area, will participate in "The Breast Cancer 3-Day benefitting Susan G.Komen for the Cure," a 60-mile fundraising and awareness walk to be held in Tampa, Oct. 30-Nov. 1, 2009.  This marks the second year the team has participated in the walk, and the new cookbook is just one of many fundraisers the team is using to collect money for the cause. Four members of the team have been personally touched by breast cancer, while many others have been affected by other forms of cancer. The Tampa walk is just one of 15 events nationwide.

"I'm so proud to lend the Fantasy of Flight name to our incredibly dedicated team of walkers, their amazing cookbook and to this very worthwhile cause," said Kermit Weeks, founder and creator of Fantasy of Flight. "Cancer has personally affected several of our employees and members of the team, so I know that our walkers are taking this fundraising endeavor very seriously.  I wholeheartedly applaud their tireless efforts. The Fantasy of Flight 3-Day team is an inspiration to us all."

The cookbook recipes were gathered from team members, family and friends, some of whom are breast cancer survivors.  Some recipe favorites include the Maryland Crab Cakes (see recipe below), Tex Mex Throw Together, White Chicken Chili, Kicken' Chicken Stew and Mac and Cheese.  The cookbook will be available for sale until Nov. 1, 2009.

One of the favorite recipes from the new "Cooking for the Cure – Fantasy of Flight for the Fight" cookbook:

Maryland Crab Cakes
2 T. Mayonnaise           
1 Egg
1 tsp. Worcestershire Sauce   
1 (16 oz.) can Lump or Back Fin Crab Meat
1 tsp. Dry Mustard
1 tsp. Old Bay Seasoning

Combine all ingredients except crab meat and blend well. Fold in crab meat being careful not to break down the crab meat lumps.  Form into 6 cakes. Chill for at least 2 hours. When ready, fry crab cakes in frying pan in about 1 inch of oil. Fry for several minutes on each side. Remove from pan, drain and serve.
